Spicy Tarragon Vinegar Recipe


Make tarragon vinegar 
Tarragon vinegar adds garden fresh flavor to pork, chicken and seafood. It also pairs beautifully with vegetables like asparagus, mushrooms, peas and artichokes. It's a low calorie but delicious ingredient in salad dressings. Use tarragon vinegar to add a smooth anise undertone to your dishes.

Tarragon Vinegar Recipe

Ingredients
  • 2 Cups white vinegar
  • 8 Sprigs fresh tarragon (You can also use two tablespoons dried tarragon, but fresh is preferred)
  • 10 Black peppercorn
  • 1 tsp. Lemon peel (optional)
  • 1/2 tsp. Mustard seed
  • 1 Bay leaf
Instructions
  1. Wash tarragon and place in a clean jar with a plastic (non-reactive) lid. 
  2. Add peppercorns, lemon, mustard seed and bay leaf.
  3. Fill the jar with warm vinegar (about 105° F).
  4. Cap tightly and shake.
  5. Place the jar in cool, dark location for three weeks to a month, shaking the contents every few days.
  6. Strain your tarragon vinegar through a double length of cheesecloth, a fine mesh sieve or a coffee filter. If you use dried tarragon, you may have to filter twice.

Special Note: The longer tarragon vinegar infuses, the stronger the flavor will be.
