They are similar plants but different in execution. The Ceylon looks like a rolled cigarette, lighter in color, while the cassia is hollow and dark red in color. I read a while back and started adding a little cinnamon to my coffee, I actually sprinkle the cinnamon on top of the coffee grounds, so when it brews it permeates in the air and the coffee tastes more like of a gourmet kind.
