Dandelion Jelly

Dandelion BlossomI am a lover of herb related rubs, blends, jellies, vinegars, an oils. I post quite a few myself, but found a beauty I wanted to share from the new about.com herb site.

Amy Jeanroy has her site looking great, and has posted a wonderful recipe for dandelion jelly. I don't know about you, but one summer when I was in my teens, I read Dandelion Wine by Ray Bradbury and have had a soft spot in my heart for dandelions ever since (my husband hates them). I plan on trying her recipe as soon as I have ten cups of dandelion blossoms - from someone else's lawn, of course.

Special Note: If you have a caged bird at home, give him a special dandelion seed treat this summer. Just offer him the seed head by clipping the dandelion stem to the cage with a clothes pin and let him pull out the seeds himself.

  1. i LOVE dandelion jelly (and syrup too). it has such a light honey taste to it. great on homemade bread that is hot out of the oven, smeared with some freshly churned butter.

    yum!

    my dandelion mead wasn't too shabby either for a first attempt.

    I'm also a lover of herbal remedies and I keep up to date with the latest trends regarding its benefits and different formulations you could do with it. Your article about how flexible herbs could be and their various health benefits is overwhelmingly good. More people should be aware on how herbs have help us so much with throughout the years - from our very own medicine to promoting a long and healthy life!
